For one of our lunches this week, I tried a new twist on our Turkey Sandwiches. I am trying my best to plan ahead for ALL of our meals each week and give Mister M a variety of delicious, healthy yet simple lunches. I am trying to stay away from processed and make his lunches myself. This has more to do with health reasons than cost but I am finding that is saving me money as well which is always nice!
So yesterday, we had Turkey Caesar Sandwiches with fresh veggies and ranch dip and a fresh fruit bowl for dessert. (Mister M also got some cheetos because those are a favorite treat for him.)
Turkey Caesar Sandwich
Ingredients for the Caesar Dressing Sauce:
- 1 tablespoon grated Parmesan cheese
- 2 tablespoons light mayonnaise
- 2 teaspoons freshly squeezed lemon juice
- 1 dash Worcestershire sauce
- Salt and ground pepper
Directions for making the Caesar Dressing Sauce:
In a small bowl, combine Parmesan, mayonnaise, lemon juice, and Worcestershire; season with salt and pepper. Spread on both bread slices.
Break lettuce into large pieces; layer half on 1 slice of bread. Top with turkey, remaining lettuce, and bread.
Finally just spread the Ceasar sauce over your bread and make with your favorite thinly sliced turkey. Add some lettuce and cheese and voila. You have a quick, delicious lunch your entire family can enjoy!
